[edit]Circa 1600, from Ottoman Turkish تارخانه (tarhana), from Persian ترخانه (tarxâne, “tarhana”), from تر (tar, “wet”) + خوان (xwân, “food, tablecloth, dining table”). The modern Turkish spelling is tarhana.
