From Aramaic סַרְטָנָא (sarṭānā); compare Arabic سَرَطَان (saraṭān) and Hebrew סַרְטָן (sartán). The sense of “cancer (disease)” is either a semantic loan from Ancient Greek καρκῐ́νος (karkĭ́nos) or Arabic.
