[edit]Wiener (“Viennese”) + Schnitzel (“schnitzel”). First mentioned in a cookbook called Allerneuestem allgemeinen Kochbuch ("latest general cookbook") from 1831 by Maria Anna Neudecker as Wiener Schnitzel von Kalbfleisch ("Viennese cutlet [made] of veal").[1]
