Borrowed from French buffet.

The spelling Büfett, preferred at least in Germany, represents the Germanised pronunciation in /ɛt/. Such a pronunciation has established itself in many words like Parkett, Kabarett, etc. In the case of Buffet, however, the French pronunciation has widely prevailed, which means that speakers now often pronounce /eː/ while reading and writing Büfett.
