From Middle Persian [Term?] (/⁠sarkāw⁠/, vinegar).

Alternatively, borrowed from Turkic, compare Azerbaijani sirkə, Ottoman Turkish سركه (sirke), etc. According to Doerfer, direction of a possible borrowing between Iranian and Turkic is not clear.[1]
