[edit]Uncertain. Possibly from Vize, from Latin vice, in the sense of “wine substitute”. The V-spelling at any rate seems to be based on this interpretation.
Alternatively from Latin faex (“dregs”) as the word formerly also referred to a drink made from water and pomace (residue after pressing grapes). The development from Latin [ɛː ~ eː] to [iː] would be in line with Moselle Franconian dialects (but note that Luxembourgish Viz should be *Véiz in this case).
