There are two meanings of 肉。1,"肉"是指"食用肉",比方说"肉圆meatball",(中国又叫"红烧狮子头",或者"红烧刘欢":)2,肉又指"脂肪fat",比方说"一身膘肉chubby,满脸横肉,脸无四两肉"。丝竹俚语肉头的"头",可以理解为the top layer. The top layer of the meat, that would be " fat"."有肉头"means "has some fat, thickness and voluptuous.
Thus, in this special usage referring to instrumental musical sound, 肉頭 could be translated into English something like "robust," "meaty," "full-bodied," etc.
