- (cooking) Chopped chili. In Hunanese cuisine, these are fermented with salt. They may be bought in grocers as a prepared condiment or made from fresh chilis in the home kitchen. Typically, not as spicy as some other Chinese condiments featuring chilis. Well-known as the main ingredient in a Hunanese steamed fish head dish.
