[edit]Apparently from Greek χαβιάρι (chaviári), from Byzantine Greek χαβιάρι (khabiári), from Ottoman Turkish خاویار (havyar), from Persian خاویار (xâvyâr). Doublet of كَافْيَار (kafyār) from French or English.
