[edit]Uncertain. Possibly from an unattested intermediate Vulgar Latin *stumbu(m), from Latin scomber, from Ancient Greek σκόμβρος (skómbros), which is, according to Beekes, of Pre-Greek origin. Compare for more Italian sgombro, Spanish escombro.
