[edit]From late Middle Dutch stēvele, from Old French estivel. Borrowing from Standard German Stiefel (as sometimes assumed) is unlikely for phonetic reasons, but it could well have passed through Low and Central German dialects (Middle High German stivel, Middle Low German stēvel).
