Possibly - because of the feminine gender and the palatalization on the last syllable - from (or influenced by) Old French espinoche, from Old Occitan espinarc, ultimately from Arabic إِسْفَانَاخ (ʔisfānāḵ), from Classical Persian اسپناخ (ispanāx, ispināx).
