  1. (archaic) The process of turning rancid.
    • 1815, David Blair, A grammar of the principles and practice of chemistry:
      Other liquid substances become concrete by exposure to air, in consequence of the absorption of oxygen, as in the process of rancescence of oils, in the conversion of the oily portion of milk or cream into butter, &c.
