[edit]Possibly from Middle Low German spelt (“spelt”) plus the suffix -k, creating the meaning "spelt barn", which was used as a toilet in the past.
Alternatively from the unattested Middle Low German *pȫldīk (“waste water pond, hole, pond of faeces, hole of faeces”).
