- Any of a range of dairy products used in the cuisines of various Middle Eastern, Central Asian and Eurasian cultures:
- A thick, whitish liquid (sometimes dried) made from whey, used in Iranian and Kurdish cuisine.
- Dried, fermented yoghurt, buttermilk, or cheese, especially when shaped into small balls, consumed in Kyrgyz and Uzbek cuisine.
