Etymology

Highly disputed; officially, the Royal Spanish Academy does not recognize any etymology. However, some etymologists have theorized that it may have originated either from Vulgar Latin *bovinica ("pertaining to bovines") or from bovinus (“pertaining to cattle, oxen or cows; bovine”).

Some have also theorized that it may come from moñiga, from *moñigo, from *munnigo. from monneka (“milestone or landmark”), whence muñeca (“wrist, doll”) originates.

It is also theorized that it may have come from Catalan bony (“bulk, lump”) or possibly from Spanish buñuelo (both of which are highly improbable given that neither of them have any sort of resemblance to cow or horse dung).
