[edit]Borrowed from Spanish barbacoa (“meal of roasted meat or fish”), from Taíno barbakoa (“framework of sticks”), the raised wooden structure the Indians used to either sleep on or cure meat. Compare Cebuano balbakuwa (“ox skin and tail stew”). Doublet of barbikyu.
