牛頭人／牛头人 (niútóurén) is from Japanese NTR (NTR) because the Pinyin initials of 牛頭人 is NTR, as in, when you type NTR in a Chinese input method, you'll get 牛頭人 as one of the results. NTR is an abbreviation of 寝取られ (ねとられ, netorare), which means adultery.
It is an internet slang term, and it's created because words like 婚外情 (hūnwàiqíng) and 不忠 (bùzhōng) are too "formal" for internet use, so a word for casual use is needed. --ItMarki (talk) 12:32, 8 January 2021 (UTC)
