In Old Bulgarian, which formed the basis for Old Church Slavonic, the word for a dove is „гълѫбъ“. In the later Russian edition, the reduced vowels „ъ“ and „ь“ turned into „о“ and „е“, respectively, which may be the reason why you found the word written with an „о“ insted of an „ъ“. Other words following that common pattern are for example сънь—сон, гърло—горло, дьнь—день, львъ -> лев, тврьдъ -> твердый and срьдьце -> сердце.
