Etymology

Literally, Hollandic new [catch], a TSG product subject to specific quality criteria including the criterium that it be caught and sold between the 1st of May and the 31st of August of a given calendar year, whence the qualifier Nieuwe - it having been caught early in the season and sold while still fresh.
