Traditionally said to be ἀ- (a-) +‎ τρυγάω (trugáō, to harvest) +‎ -τος (-tos), but Beekes calls this unlikely (it would produce Ionic ἀτρύγητος) and instead prefers the suggestion by Vine of un-dry-able.
