From ܛܒܚܐ (ṭabbāḥāʾ, butcher), from the root ܛ-ܒ-ܚ (ṭ-b-ḥ) related to slaughtering + the abstract noun ending -ܘܬܐ (-ūṯāʾ). Compare Hebrew טַבָּחוּת (ṭabbāḥûṯ).
