Inherited from Middle French coy, from Old French coi, from Vulgar Latin quētus, from Classical Latin quiētus, derived from quies. Doublet of the borrowings quitte and quiet. Cognate with English coy, quit, quiet. The original feminine coie is attested until the 18th century. The modern form is analogous (e.g. with droit, droite) and/or influenced by the aforementioned doublets. Compare similar spelling inconsistencies in absous, andalou, esquimau, favori.
