English: Kuai-tiao rat na (Thai script: ราดหน้า): Stir-fried broad rice noodles (the Chinese shahe fen) served with stir-fried vegetables and meat or seafood in a thick gravy made from stock (pork, chicken or vegetable) and oyster sauce and which has been thickened with, for instance, corn starch. In Thailand people often sprinkle some additional sugar, fish sauce, sliced chillies preserved in vinegar (with some of the vinegar), and ground dried chillies on the dish. This version is with pork and pak kana (Chinese broccoli).
